What is Transglutaminase?

Transglutaminase, also known as TGase, TG, or meat glue, is a natural enzyme with 331 amino groups and a molecular weight of about 38,000. Transglutaminase Powder can accelerate the intramolecular and intermolecular covalent cross-linking of protein polypeptides, thereby improving the structure and function of proteins and helping food proteins to bind together. This is why Transglutaminase is called meat glue, just one of its well-known functions.
